... how do you clean it up? Adding water just makes it sudsier.

Rent a carpet cleaning machine, and fill it with water, put it on "rinse" cycle and let it run on the same spot for ages and ages and ages . . . ?

lots of water and a scraper. and make sure to try to dry the spot when you're done, otherwise you could really ruin your carpet.

or rent a carpet cleaning machine, as stated above. Or find someone with a wet/dry vac.

I'd go with a wet vac by preference, but not everyone has one available. Otherwise, I think your only real option is a lot of patience. But you should be able to work with dry cloth to get a good deal of it, and you may be better off with damp than actual wet for the rest, which is pretty much what worked last time I spilled laundry detergent.
