Today's baking experiment: pumpkin oat streusel muffins.  I used white whole wheat flour, substituted butter for margarine and left out the nuts.

Not very pumpkiny.  Kind of boring, in fact, and the streusel is just weird.  The butter in it burned a little, which makes it bitter.  (Does streusel usually have butter or margarine in it?  The streusel recipes I've used have never included it.)

Streusel (German word, German invention) definitely does have butter as a canonical ingredient. When done well, it's very yummy. Burning the butter is not good, but browning it makes for a very nice taste.

I am confused about how you make streusel without butter or margarine. Isn't streusel definitionally made of flour, sugar, and butter all crunched together?

I'm sorry your muffins were boring.

Yep. He was confusing streusel with a different topping :)
