turkey!
Our turkey still had a feather on it!  That was so awesome.

Homemade pumpkin pie with oak leaf pastry decoration, courtesy of [livejournal.com profile] primal_pastry.  Made from scratch, starting with a pumpkin!  That woman is so cool.

chocolate cranberry cake
The infamous chocolate cranberry cake: chocolate cake with a cranberry filling and chocolate glaze.  Sugared cranberries and mint on top.  It worked out even better than I expected: the cake was extremely dense (three times as much butter as flour) and the cranberry was sweet enough that it didn't clash.

I haven't seen a cooked-untrussed turkey with legs spread wide before. I'm a bit surprised the tips of the drumsticks aren't burnt.

Mine was untrussed, came out looking similar, and was cooked essentially the same way -- breasts down at high temp for an hour, turn, reduce temp, finish. I thought about foiling them but it wasn't necessary.

Read it through thoroughly beforehand -- we didn't and were surprised, at 1 am, by stuff like "a fine-mesh sieve" we'd forgotten to track down. :}

Also, we used Maraschino liqueur (http://www.cocktaildb.com/ingr_detail?id=170) in place of "orange liqueur or dark rum"; it worked very well, and I recommend it if you have some.

We always thought the point of trussing the legs was to keep the stuffing in, and we don't cook our stuffing inside the turkey for food-safety reasons. Is there another reason to put the legs back together?

Traditionally, to keep the tips from being overdone -- likewise, the advice one sometimes sees to hide the wing tips under/behind the bird. Covering the end bits with foil can mitigate the damage if one is using high-ish heat.

Just wanted to say, a couple of weeks ago I turned a pumpkin into pie for Cruiser. Saved the seeds to plant next year.

There's another pie's worth in the freezer. All my sources, including Cook's Illustrated says canned pumpkin is just as good. I may test this on my Xmas guests.
